Act 1, Scene 3
In the beginning of this act when Sir Toby (Olivia's uncle) and Maria (Lady in waiting)entered it showed how insensitive Toby really is. He doesn't understand as to why Olivia is being so dramatic with her brother being dead. Maria seems to become perturbed with him, saying he party's all the time and doesn't seem to care. To the audience this would in turn bring out irritation. And possibly have no respect for him at all.
Going on Maria mentioned that Olivia inquired some knight tried to seduce her. Then went on saying that he is foolish with lack of brains. Toby seems a little appalled by this matter. Maria even agrees to this statement, that the knight is an idiot.
Later in this act the knight enters the scene. His name being Sir Andrew. Through out this introduction of him you can tell he is not the brightest of characters. Sir Toby suggest that Sir Andrew 'woo' Maria right on the spot. Although Andrew declines, the audience should feel quite annoyed with Toby. At the the end this conversation after Maria exits, Andrew points out he eats a lot of red meat and that might be why she thinks of him as stupid.
In this instance Andrew should show his puzzlement on this matter, making the audience get a real sense of his mental stature. This might as well make the audience laugh at this moment. In turn, that might make Sir Andrew more likable then Sir Toby.

I like your take on the
I like your take on the scene, but I think some of the meaning between the words might be different from what you take from it.
For example, I think Sir Andrew is Sir Toby's friend, who Toby is trying to set up with Olivia. By reading the footnotes, it looks like Sir Toby is trying to make Sir Andrew meet and greet with Maria, but Andrew takes it the wrong way - which would show his incompetence.
Although Sir Toby is a truly disgusting character (after all, his name is Toby Belch), he is comedic in his intoxicated ways. I think he might even be amusing to the audience. I wish we could've seen the movie rendition of it today, to get a good feel on how Sir Toby really acts.
best friends, maybe forever
You are right that Andrew and Sir Toby are friends. I don't know that I'd call Toby disgusting, but I don't think I'd want him in my house. As a character though, in someone else's house, he's fun to watch.
